Fruit and Vegetable Recipes - Broccoli with Olives, Peppers and Feta
Ingredients:
2 cups broccoli florets
2 tsp olive oil
1 clove garlic, thinly sliced
6 Kalamata olives, pitted and chopped
1/3 cup roasted red peppers, diced
1 tbs fresh parsley, finely chopped
2 tsp fresh marjoram, finely chopped
1 ounce feta cheese, crumbled
salt and pepper to taste
Preparation:
1. Steam the broccoli until tender, but still crisp, approximately three minutes.
2. Heat oil and garlic in a large, non-stick skillet over medium heat. Remove garlic after it has browned and add the steamed broccoli, olives, peppers, parsley, and marjoram.
3. Combine well and heat through. To serve, scatter cheese over the top, season with salt and pepper and garnish with lemon wedge.
