Poultry - Curried Mango and Chicken Salad
Ingredients:
3/4 cup plain low fat yogurt
2 tablespoons low fat mayonnaise
1-1/2 tablespoons mango chutney, fruit finely chopped
1-2 tablespoons curry powder
4 cups cubed cooked chicken
2 mangoes, peeled, cut away from the pit and diced
1/2 cup currants or black raisins
1 cup slivered almonds, toasted
Kosher salt and freshly ground pepper
Preparation:
1. Combine yogurt, mayonnaise, chutney and 1 tablespoon of the curry powder.
2. Gently toss the chicken, mangoes, currants and almonds with the dressing. Season to taste with salt and pepper and additional curry, if desired. Allow the flavors to combine at least one hour in the refrigerator before serving.
