Soups and Toppings - Gazpacho
Ingredients:
2 medium cucumbers, peeled, seeded, and cut into 1 inch chunks
1 large red bell pepper, de-stemmed, seeded and cut into 1-2’ pieces
1 large green bell pepper, de-stemmed, seeded and cut into 1-2’ pieces
1 28-oz. can diced tomatoes, including juice
3 cups Tomato or V-8 juice
1 large onion, peeled and cut into eighths
4-6 stalks celery cut into 2” pieces
1 clove garlic, minced
1/2 cup red wine vinegar
1-2 tsp. Worcestershire sauce
1/2 tsp. Hot pepper sauce
Preparation:
1. Combine all ingredients in food processor or blender.
2. Process for 30 to 60 seconds or until the vegetables are coarsely chopped and thoroughly combined.
3. Add salt and pepper to taste. Refrigerate.
4. Garnish with a dollop of sour cream or plain yogurt.
