Desserts & Snacks - Low-Fat Pumpkin Pie
Ingredients:
1 1/2 Packages Mori-Nu Lite Tofu-Extra Firm (For lighter texture use Mori-Nu Lite Tofu-Firm)
1 15oz. canned pumpkin puree
2/3 cup of honey
1 tsp. vanilla
1 Tbsp. Pumpkin Pie Spice -OR- next 4 ingredients:
1 1/2 tsp. ground cinnamon
3/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1 unbaked 9" pastry crust
Preparation:
1. Pre-heat oven to 350∞. Blend Tofu in a food processor or blender until smooth. Add remaining ingredients and blend well. Pour into 9" unbaked deep dish pie shell. Bake for approximately 1-hour. Filling will be soft, but will firm up as it chills. Chill and serve. Makes 1 9" pie.
Pumpkin Creme Pie: For a creamier version, blend 1 package Mori-Nu Lite Tofu Ex-Firm, 4 Tbsp. water, 2 packages Mori-Nu Mates Vanilla Pudding Mix, 2 cups pumpkin and spices. Follow directions above.
